  • Certificate in Culinary Arts and Professional Cookery
  • Not always mandatory but strongly expected in fine dining environments
  • Basic food hygiene certificate
  • Understanding of seafood handling and storage
  • Short sushi course OR in-house training
  • Basic knowledge of
    • Sushi rice preparation
    • Rolling techniques  maki
    • Knife safety
  • 1 to 2 years in a professional kitchen
  • 6 to 12 months working specifically with sushi strong advantage
  • Handle basic knife work safely
  • Prepare and season sushi rice correctly under supervision
  • Roll simple maki consistently
  • Assist with fish prep cleaning portioning 
  • Plate dishes neatly and consistently
  • Follow strict hygiene standards
  • Basic use of POS and kitchen order systems
  • Ability to follow digital prep lists or kitchen screens
  • Basic communication WhatsApp email for shifts
  • Strong discipline and cleanliness
  • Ability to work fast under pressure
  • Willingness to learn and take correction
  • Good teamwork and communication
  • Attention to detail presentation matters a lot
