- Certificate in Culinary Arts and Professional Cookery
- Not always mandatory but strongly expected in fine dining environments
- Basic food hygiene certificate

- Short sushi course OR in-house training
- Basic knowledge of

- Rolling techniques maki
- Knife safety
- 1 to 2 years in a professional kitchen
- 6 to 12 months working specifically with sushi strong advantage
- Handle basic knife work safely
- Prepare and season sushi rice correctly under supervision
- Roll simple maki consistently
- Assist with fish prep cleaning portioning
- Plate dishes neatly and consistently
- Follow strict hygiene standards
- Basic use of POS and kitchen order systems
- Ability to follow digital prep lists or kitchen screens
- Basic communication WhatsApp email for shifts
- Strong discipline and cleanliness
- Ability to work fast under pressure
- Willingness to learn and take correction
